Chicken Caesar Flatbread Recipe for an Easy Weeknight Meal

There are days when you crave a salad but you’re also too hungry to be satisfied with a dinner that’s mostly lettuce. When that happens, the best solution is a combo dish — salad flavors combined with some hearty carbs, courtesy of Chicken Caesar Flatbreads.

Yep, that’s right. Tangy and delicious Caesar salad piled on toasted flatbreads. The combo is a satisfying texture and flavor bomb. Crunchy romaine, hearty chicken, plus crispy and chewy flatbread. Yum. Here are the highlights of this recipe:

Ingredients and substitutions

Here are the ingredients you need for this recipe, along with substitution options.

  • 1 garlic clove, minced. Or, use 1/8 teaspoon garlic powder.  
  • 3 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire
  • ½ teaspoon anchovy paste. Or, ½ teaspoon canned anchovies, chopped.
  • 2 tablespoons extra virgin olive oil. You could also use light olive oil.  
  • 1/2 cup Parmesan cheese, divided. Don’t tell the Italians, but I have used Cotija cheese in lieu of Parmesan.
  • 1 head of romaine lettuce. You can also add in a handful of another green, such as arugula, for a slightly different flavor.  
  • 1 lb. boneless, skinless chicken breast. Lean pork loin, chicken thighs, rotisserie chicken, and tofu can stand all stand in here.
  • ½ garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ ground black pepper
  • 2 to 4 flatbreads. Pita breads, white or wheat, work also.

Make it faster

With a few changes, you can have Chicken Caesar Flatbreads ready in a flash. To do this, skip the homemade dressing in favor of a quality bottled version. And use rotisserie chicken instead of grilling your own. Those changes shorten your ingredient list to:

  • 1 rotisserie chicken
  • 1 head of romaine lettuce — buy washed and torn romaine for the least effort  
  • ¼ shredded Parmesan cheese
  • 1 bottle of Caesar dressing
  • Flatbreads

To assemble these flatbreads the fast way, shred the chicken and mix it into a large bowl with the romaine, parmesan, and dressing to taste. Then toast your flatbreads and pile the salad on top.

You don’t need a side dish for this recipe, but you might want some liquid refreshment. Wine drinkers will enjoy Chardonnay, Sauvignon Blanc, or Pinot Grigio with this dish. The Chardonnay should complement the dressing. Sauvignon Blanc and Pinot Grigio both have a nice refreshing quality that will play nicely against the salad’s rich flavors.

Complementary beer options include a hoppy pale ale, light wheat beer, or smooth blonde ale.

Ingredients

  • Dressing-
  • Salt and pepper (to taste)
  • 1 large garlic clove (minced)
  • 3 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon anchovy paste
  • 2 tablespoons extra-virgin olive oil
  • ¼ cup parmesan cheese
  • Other-
  • 1 medium head romaine lettuce
  • ¼ cup shredded parmesan cheese
  • 1lb boneless skinless chicken breasts
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 medium flatbreads

Instructions
  1. In a small bowl whisk together lemon juice, Dijon, 2 tablespoons olive oil, anchovy paste, Worcestershire sauce, garlic, salt, and pepper. Stir in ¼ cup parmesan cheese.
  2. In a small bowl combine salt, pepper, garlic powder, and onion powder. Season the chicken breasts on both sides with the spice mixture. Heat an outdoor grill to medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side or until fully cooked (the internal temperature has reached 165 degrees F.). Remove from the grill to a plate and let rest.
  3. Turn the heat on the grill to medium. Add the flatbreads and cook for 1-2 minutes being careful not to burn them. Remove from the grill.
  4. Slice the chicken breasts into thin strips. In a large bowl combine romaine lettuce, sliced chicken Caesar dressing, ¼ cup shredded parmesan cheese. Spoon over the flatbreads. Slice and serve.
