杏仁小饼干,浓浓的奶香味中掺和着淡淡的杏仁香味儿,口口香酥。
做法很是简单,非常适合烘焙新手尝试哦!


杏仁小饼干
用料:低筋面粉170克。黄油110克,糖粉80克,盐1克,鸡蛋液30克,杏仁碎适量;


做法:

1.黄油切小块室温下软化,放入糖粉、盐;
2.搅打至黄油顺滑,体积开始膨大;
3.分两次加入蛋液(加入一半蛋液搅匀后再加另一半);
4.搅打至黄油体积蓬松,颜色稍有变白;
5.筛入低筋面粉;
6.用刮刀翻拌均匀,拌好的面糊装入保鲜装中放入冰箱冷藏半小时;
7.冷藏后的面糊取出,揉搓成条状,然后放入冰箱冷冻约半小时;
8.当面糊冻硬后取出,用刀切成约0.5厘米厚的小圆饼;
9.在小圆饼上面粘上杏仁碎,放入预热好的烤箱中,175度烤约15分钟后取出晾凉即可。

经验分享:
1.步骤6将面粉拌至无干粉状就可以,不要过度搅拌,搅拌的时候不能划圈,用刮刀翻拌或切拌,以免面糊起筋;
2.拌好的面糊比较软,将其装入保鲜膜放入冰箱冷藏约半小时,可使面糊变硬方便下一步整形;
 3.最后烘烤的温度会因为所用烤箱的不同而会有所差异,要注意观察,随时调整。
