农家一碗香,是一道比较经典地道的湘菜。

它一般选用五花肉、鸡蛋、竹笋,配上青、红辣椒炒制而成,味道很是鲜美,也很下饭。
它的做法也比较简单,用来做为咱湖南人年菜中的小炒,是非常不错的选择哦!


 

农家一碗香

主料:五花肉150克,鸡蛋2个,水煮竹笋100克;
配料:青尖椒5个,小米椒3个,豆豉十余颗,蒜苗1条;
调料:料酒1大匙,大蒜2瓣,白糖1小匙,酱油2小匙,鸡精少许,盐适量;

做法:

1.准备好各种原料;
2.五花肉切薄片,青尖椒与小米椒切圈,竹笋切薄片,蒜苗斜切成段,大蒜去皮切片;
3.热锅放油,磕入鸡蛋,两面煎黄后用锅铲将其分成小块,舀出待用;
4.锅内余油,下入五花肉,炒至五花肉出油;
5.下入一小匙酱油,炒匀上色后舀出待用;
6.锅内余油,下入青尖椒、小米椒、豆豉、大蒜片,炒出辣味;
7.放入竹笋,炒匀;
8.下入之前炒好的五花肉与鸡蛋,炒匀;
9.下入盐、料酒、鸡精、白糖、酱油,炒匀;
10.下入少量的高汤或清水,焖一分钟左右;
11.下入蒜苗,炒匀即可。

经验分享:
1.我用的是水煮竹笋,如果竹笋是新鲜的,切成片后要先焯水;
2.五花肉可先放入冰箱冷冻一会儿冻硬一些再切,这样好切一些,就容易切出薄片了;
